For joints to move smoothly, there's a bit of fluid that lubricates them. That fluid's got some gasses dispersed throughout it. When joints stiffen up because of pain or being twisted or anything, the gasses gather. So, when joints get moved back into proper position, you'll sometimes hear noises like that because the gas is dispersing all at once -- kind of like opening a bottle of champagne.

Yeah, for the knee. I'd want to get your back too if you're all right with it, since if you were favouring the knee you've been probably really slightly off balance, but if you'd rather I didn't, I won't.
